Apple Pies

Fancy a warming sweet treat? Try these low calorie apple pies.
Ingredients
6 sheets of filo pastry
1 large can (770g/800g) can sliced apples
Cinnamon and mixed spice - optional
Preheat oven to fan bake 160 degrees or 180 degrees without the fan. Lightly spray a 6 cup texas muffin pan with cooking oil spray.
Lay four sheets of filo pastry on a dry bench or board and spray between the layers with cooking spray. Cut the layered sheets into four squares (i.e. four squares of four layers each).
Layer the two additional filo sheets on top of each other, spraying between the layers. Fold the layers on each other, forming 4 layers of filo sheets. Cut these in half, so that you now have 6 piles of filo squares, each containing 4 layers of filo.
Push each of these filo squares into a muffin pan. Divide the apple amongst the filo and sprinkle a little cinnamon and mixed spice on top, if desired. Spray the exposed pastry with cooking spray and place in hot oven and cook until the pastry starts to brown and crisp up - approximately 15 minutes.
Serve hot or warm with a little low fat ice-cream or yoghurt.
Tip
Remove filo pastry from the fridge an hour or so before using preferably. Make sure you use the filo on a dry bench, with dry hands and do not leave exposed to air out of the packet for long or it will crack and tear. Use immediately you take it out of the packet and replace unused filo in it's plastic bag, seal and refrigerate to keep it fresh. Use within a week of opening.
If you have leftover apple pies, you will need to reheat them in the oven, not microwave. Leftover filo items will collapse and go soggy when stored in the fridge, but crisp up again when reheated in the oven.
