Chilli Con Carne
Serves 4
500g lean mince
1 tsp crushed garlic
1 medium onion, diced
1 tsp dried oregano
1 tsp dried mixed herbs
1 x 410g can tomato puree
1 cup water
1/4 cup (70g) tomato paste
1 tsp beef stock powder
1 x 410g can chilli beans
Salt & black pepper to taste
Brown mince in large saucepan with a light spray of olive oil or avocado oil. Drain well and remove to plate. Add rest of ingredients, except beans, to saucepan. Bring to boil and reduce heat, simmering for 5 minutes. Add mince back to the pan together with beans and simmer a further 10 minutes. Serve with brown rice and lots of lightly cooked vegetables.
