Moroccan Mince

Moroccan Mince

Serves 4-6
 
Tip: Choose lean mince, or brown of the mince before hand and drain off the fat.


Ingredients
•    600g lean mince
•    1 large onion finely chopped
•    1 tsp grated root ginger (from a jar is fine)
•    1 1/2 tsp curry powder
•    1 tsp Moroccan spice
•    1 cup frozen peas
•    2 tablespoons of fresh mint chopped
•    400g can of crushed tomatoes
•    Seasoning to taste
•    Low fat plain yoghurt to serve (optional)

Directions

Heat a non-stick pan, spray with cooking spray and gently sauté mince and onion until browned. Add ginger, curry powder and Moroccan spice and cook a few more minutes.

Add remaining ingredients and simmer 10 minutes.

Serve with a generous dollop of plain yoghurt and lots of vegetables.
