Oat Berry Muffins

Makes 12
 
Ingredients

•    1 cup flour
•    1 cup rolled oats
•    1/4 c brown sugar
•    1/2 cup ground flax-seeds or LSA
•    1 tsp baking powder
•    1 tsp baking soda
•    1 tsp mixed spice or cinnamon
•    240 grams of non fat yoghurt
•    2 egg whites
•    1 tablespoon of olive oil
•    Vanilla essence
•    1 cup frozen or fresh berries

Directions
Mix flour, oats, sugar, spices, baking powder, baking soda and flaxseeds in a large bowl.
Combine yoghurt, egg whites, vanilla and oil then slowly stir into oat mixture.
Fold in berries, spoon into 12 non-stick muffin tins

Bake for 20 minutes at 200 degrees. Can be frozen.
