Rhubarb Crumble with a Crunchy Caramel Crust
Serves 4
Ingredients
¾ cup flour
1 tsp baking powder
½ cup rolled oats
¾ cup sugar
100g melted butter
4 cups diced rhubarb (or sliced apple or other fruit if preferred)
¾ cup brown sugar
1 tbs cornflour
¼ cup boiling water
Sift flour and baking powder into a bowl and add rolled oats and white sugar. Melt in melted butter and stir well to make crust mixture.
Spray a medium sized oven proof baking dish with cooking spray and place rhubarb in the dish. Sprinkle prepared crust mixture over the top.
Combine brown sugar and cornflour and spoon over crust mixture. Very carefully, pour boiling water over the top – do not stir.
Bake at 180 degrees C for about 30 minutes or until the crust is golden and crunchy.
Serve with low fat ice-cream or custard made with low fat or trim milk.
