Salmon and Corn Patties

Serves 4-6
 
Ingredients

•    2 x 210g tins of pink or red salmon, drained
•    ¾ cup drained corn kernels
•    ¼ red onion, finely chopped
•    1 tsp (or more to taste) sweet chili sauce
•    2 eggs, lightly beaten
•    Chopped parsley
•    Ground black pepper

Directions
Mix all together well and then shape into six patties. Cook on lightly oiled bbq plate or use non-stick pan, which has been sprayed with cooking spray oil.

Cook until browned each side.

Tip: serve with fresh asparagus and brown rice or a fresh garden salad.
