Scrambled Eggs

An old favourite and a nutritious breakfast, scrambled eggs are an ever popular ‘healthy’ breakfast choice at the café.While eggs make a filling and nutritious breakfast when ordered at the café you don’t get to see what actually goes into them. Ever wondered why your homemade scrambled eggs never taste quite the same as the ones you get at the café?

It could be the extra ¼ cup of cream that gets added to the egg mix (adding an extra 200 calories), the extra tablespoon of butter that your eggs get fried in (adding an extra 120 calories), or the extra tablespoon of butter that is lathered over your toast before your ‘healthy’ eggs are placed on top.

Make your own scrambled eggs at home using the following recipe and save yourself the extra 450 calories of saturated fat!

Ingredients
•    2 eggs per person
•    ¼ cup low fat milk
•    Salt and pepper to season

Directions

Beat eggs in a bowl with a whisk or fork. Mix in milk. Heat a pan and lightly spray with olive oil. Add the egg mix. Cook until creamy, stirring occasionally to prevent from sticking. Serve with wholegrain toast, tomatoes and fresh fruit.
