Thai Fish Cakes

Tasty Thai Fish Cakes

Serves 4 
 
500 grams White Fish
3 tsp Green Curry Paste
1 Tbsp flour
1 egg and 2 egg whites
1 Tbsp Sweet Chilli Sauce
1 Tbsp Coriander, chopped
1 Spring Onion, chopped
Breadcrumbs to coat.

In the food processor whiz the white fish until well minced.  Transfer to a bowl and add eggs, green curry paste, flour, sweet chilli sauce, chopped spring onion and chopped coriander.  Shape into patties and sprinkle with breadcrumbs.  Fry in a non-stick pan until golden and cooked through.  Serve with sweet chilli sauce dip.  Garnish with lemon or lime wedges for squeezing. Serve with salad.
