Vegetarian Chilli Beans

serves 4

1 large onion chopped
2 tsp crushed garlic
1 capsicum cut into chunks
2 x 400g cans crushed tomatoes
1 tsp sugar
400g can tomato puree
2 tsp sweet chilli sauce - or to taste, more if you prefer
1 tsp cumin
1 tsp dried coriander
1 tsp mixed herbs
400g kidney beans, drained
salt and ground black pepper

Spray a non stick pan with cooking spray and saute onion, garlic and capsicum for 3 minutes.

Add rest of ingredients, apart from kidney beans and simmer gently for 15 - 20 minutes.  Add drained kidney beans and cook a further 10 minutes.
