What will happen if I run a LOT and strength train a LOT, doesn’t running make you weaker, and lifting make you slower?

It should be the opposite. Running increases your cardiovascular fitness and weight lifting increases your strength.
 
Training frequency, duration and intensity depend on your current level of fitness and your goals. Good nutrition is an important factor in exercise recovery, for example if you are not replacing carbohydrate, fluid and protein after exercise you will not be adequately recovered for your next session.
 
Unless you are an athlete with a specific goal, for general fitness you should aim for 1-3 strength sessions a week and 5 -7 cardio sessions. Mix it up so you don’t get bored or over trained. Stretching is important too.
